Use the pipe character, more details here:

It’ll look like this:
[select recipient “Michael|[email protected]”
“Dennis|[email protected]”
“Toby|[email protected]”]

I have similar requirement as Brian for the need to use the first part before the pipe, as using the [recipient] mail tag returns the value after the pipe. Is this possible with the current version or would it still require customization with an additional module as you mentioned?
