You don’t need multiple WordPress installations, you can have yoursite.com and your blog on yoursite.com/blog with one WordPress installation. just set the blog page on your settings > reading.

i don’t know why you need that plugin, it’s old and not updated since a long time, your menu is not responsive or conflicting with the plugin it may need some css work.
plus whats wrong with default theme menu.

That sounds pretty advanced work, get yourself familiar with WordPress and custom post types first, or hire someone experienced to do it.
you can do that with custom post types.

WordPress doesn’t add category name to the single post, to do that we need this simple function, add it to ur functions.php (clearly was wrong when i said no php)

   return $classes;

body.category-catname .entry-date,

you can hide the author, date via css without touching php or using a plugin, you can hide for specific categories too.
