Yes, you can manually control the actual charge to the customer by enabling Manual Capture in WooPayments. This allows you to authorize the payment at checkout and capture the funds later after verifying product availability.
To enable this, go to WooCommerce > Settings > Payments > WooPayments and check the option for Manual Capture. Once enabled, payments will not be immediately charged, giving you the flexibility to adjust or cancel them before finalizing.

The issue is not related to WooCommerce being incompatible with PHP 8+ but rather to the Angell Eye PayPal plugin using a deprecated function (wc_get_log_file_path) in WooCommerce 9.6.2. Since downgrading WooCommerce resolved the issue, this indicates that the plugin may need an update to maintain compatibility with the latest version.
I recommend reaching out to the Angell Eye PayPal plugin developers to report this and check if they have an update or workaround available. If the issue persists, you may want to consider an alternative PayPal gateway.
