Agreed. There’s ongoing work to improve the design there.
There’s huge unnecessary white space left and right in the main body content of the post edit screen.
The editing area depends on the content width the theme chooses to use. Generally it aims at having a readable line length.
So a user gets this jarring experience between one editing screen and another.
The classic interface is meant to handle post type that don’t support REST or don’t support “content” fields. The latter is generally indicative of more data driven contexts for which a visual editor is not the best UI.

They sneak everywhere! If there’s a persistent “this post is not saved” it might be coming from a plugin interaction or a meta-box.
Hmmm – that’s a nice naming convention.
It’s not esoteric nor a naming convention. The block editor works by communicating through the REST API. For different historical reasons, post types are not exposed by default through REST, so it needs to be enabled when they are registered, otherwise they are invisible for the client side.
I kinda can cope, but you try explaining that to a customer!
I hear you, modernizing the rest of the dashboard is something we hope to do as we move further away from the current Gutenberg phases.
As though at some point the core team are just gonna sack them off completely, hoping no one notices.
Blocks support custom fields as attributes, which is generally the better way to support them. Custom fields is also an aspect that cannot be enabled by default in the native interface because it needs REST support.
Creating Gutenberg blocks is very cumbersome

As Jamie mentions, if you’d like a more stable environment you can just use vanilla WordPress which bundles stable releases of Gutenberg.
