He activado el tema ?Twenty Twenty? por defecto.
He desactivado todos los plugins, excepto WooCommerce.
He vuelto a realizar los pasos ?Verificar base de datos? y ?Actualizar base de datos?.

No funciona.
La tabla ?wp_wc_rate_limits? sigue sin crearse y el error sigue apareciendo.

Los pasos de ?Verificar base de datos? y ?Actualizar base de datos? ya los había realizado antes de abrir el ticket, sin éxito.

Respecto a la longitud del prefijo de la base de datos, no es mi caso.

Esta tabla wc_rate_limits es nueva de la versión 6.0.0 de WooCommerce según Enhancement – Stop using options table to store rate limits. y creo que la actualización de Woo no ha conseguido crear dicha tabla.

No sé si la tengo que crear manualmente para solucionarlo o usar otro método.
