if you use a podPress Feed then you can alter the feed title/name by editing the feed name attribute of the podPress Feed. You can find the setting on the Feed/iTunes Settings page of podPress in the section podPress Feeds.
If the feed is a category feed then the possibilities to change the feed title are more limited.

You cannot have a page with the slug name podcast while you have a feed with (almost) the same name. I recommend that you change the slug name of the page podcast-2 to podcasts.

I think the problem could be the some trouble with the feed URL. For instance: If you open the default podcast feed URL – in your case: https://www.theothershore.org/feed/podcast the request gets redirected to https://www.theothershore.org/podcast-2/ .
That makes the podcast feed not available. That is probably why your iTunes pages does not show any podcast episode and because there is no podcast episode the other error message may occur.
I suggest we try to solve the redirection problem and see what happens with the availability in the US.Do you use a further plugin to redirect feed URLs?

regarding the S3 URLs: iTunes recognizes media files only if the URL ends with a typical file name with a file name extension of one of the supported file types like .mpg or .m4a. If the S3 URLs end just with a lot of alphanumeric characters then it does not recognize the video as real file.

I’m sure that there is a possibility to shorten the category feed URLs. One way would be to create RewriteRules in the .htaccess file (see https://codex.www.ads-software.com/Using_Permalinks#Creating_and_editing_.28.htaccess.29) of your blog (the file may have a different name depending on the server software).
But I would not be surprised if there would a plugin which would help you do these settings.I changed to something simpler

if you download an episode and you see no image of the podcast while you are playing the episode then reason is most likely that you episode files do not contain a cover image.
The iTunes:image and the RSS image you can add on the Feed/iTunes Settings page of podPress are different things. These images are for instance the iTunes Store page of your podcast.The solution is to add a cover image to each episode file. You can use your iTunes client software for this purpose or other tools to edit the meta information of your files.
