Unless I’m missing something though, the category feature for product sets would limit a set to a given category. My question is specifically about including products from multiple categories in the same set, based on product tags.
If this isn’t possible then no problem, just let me know. It would be a super useful feature to see in future though.
This was caused by formatting errors on the Terms page. Solved!

It looks like the issue is limited to when product info is displayed in a quick view modal window so I’m going to speak to that developer. Thanks!
