The events are not deleted after they have expired. They are visible in Past events and data can be seen.

In the settings of event listing, choose hide expired event listing.

3- Please mention the exact option that can be used to achieve the required output.
The Sign in option will stay. If you want to completely get rid of it, You need to customize it at your end.

Rest API is to handle events on Mobile applications by the organizers. The events will need to be created on the wp event manager plugin and then listed on the application.
