You are right, any time you make account-related changes, Gmail will disconnect. It’s because The OAuth token in Gmail will reset.
If you want to use 2FA, it requires you to use App Password. Also, this method is secure.
These are security features enforced by Google, and we can’t affect them.

Please ensure that you’re using the App Password instead of using your account password. In case it helps, here is a guide on how to generate an App Password in Outlook and how to use it.
If this doesn’t help, could you please share a full error log recorded when you send a test email from WP Mail SMTP > Tools? Here’s a screenshot for the option to get a full error log. This will give us an idea of what might be going on.

We can confirm that it’s a WP Mail Logging plugin issue. The issue occurs because some plugins use the wp_mail_content_type filter to set email content type instead of headers. So, the content type is available only during email sending requests. We’ll cover this case in the next plugin releases.

This happens because you’re sending through your Gmail account, so Gmail puts a copy in your “Sent” folder.
Unfortunately, we’re unable to change that behavior since it’s handled on the mailer, Gmail, side of things.

Please note, that you’ve opened a support thread for the WP Mail SMTP plugin. If you use the Post SMTP plugin, please share your issue with their support team.
But generally, when you have trouble getting emails, such an issue could occur if the needed DNS records (SPF, DKIM, DMARC) are not added, or set up incorrectly, and/or your email deliverability score is low because previously you were sending not authenticated emails or you are blacklisted.
You need to make sure that you’ve followed all the steps on how to set up a mailer.
Also, check your email deliverability score here. And you’ll get a report with issues and ways to improve.
If everything is set up correctly, please, reach out to the Post SMTP support team and your chosen mailer support about the status of those emails. They’d hopefully be able to help!

When you get a chance, please, share your website’s error log. These should hold a record of anything going wrong in the plugin/site with more specific details.
