I have added the country field plugin.
However the validation does not work due to a default option already being selected.
I have removed the default however it just displays the first item on the list.

Is there a way to resolve this?

I need to add a field to enter the persons country.

Is it possible to deactivate the Notification email?
I will be looking regularly at the list of sign ups and do not need to receive an email every time someone signs up.
