Sure you can create a catalog. Instead of publishing single products, create and assign a category to all products you want to group. Right after that copy that category shortcode and add to page. You can include as many products as you wish.

Yes, you can see the list of the email notifications in Email Notification tab. Most basic types like new order or cancellation are available. Anyway you can create new types or modify the existing.
