I have been searching for days to find a plugin to do what you are doing. There isnt much about and this one fits the bill.
Your modifications sound great, any chance I can get a copy of your updated code please?
One thing which I think should be added is the ability to have a noreply@ email confirmation of booking. I was trying with a plugin called mp-booking but it was so far from what I needed and poorly coded that I was almost rebuilding it.
For course bookings it would be great to have a maximum bookings tab with course full update but I know this is so specialist that there is no call for it.
