@bph the Navigation Menu block is specifically the one I was looking for so I can create a custom sidebar to be displayed on specific pages only. GeneratePress Elements use the block editor to build that sidebar, hence I went looking for the navigation menu block.
@talldanwp I see the new menu block in the Gutenberg plugin, a vertical menu is what I need to add. I have a deadline of 11th Sept so 5.9 isn’t an option (still appreciating the team effort behind it!).
Is there no other method to select a pre-existing menu from the editor?

Previously the meta description on my example would have been:
“The opening paragraph should be between 120 and 155 characters to display properly on Google search engine results pages (SERPS).”
Since updating, the metabox is auto completed with:
“The opening paragraph should be between 120 and 155 characters to display properly on Google search engine results pages (SERPS). WordPress software is designed…”
Flagged as too long – 161 characters.
I know I can override it manually but I would like to avoid that for authors.

When I create a menu link to the About category, no posts found is returned?

I’ve tried resaving permalinks yeah. Switching to TwentyTwenty didn’t make any difference either. Just tried creating the same post type on a vanilla Total install, and adding post type categories as menu items will display the posts within each one. GP and TwentyTwenty both return ‘nothing found’.

The author of GeneratePress has a number of plugins in the repository, all of which are of the same quality as the theme itself.
You can create the blocks you’re describing with one of Toms plugins – WP Shows Posts – https://www.ads-software.com/plugins/wp-show-posts/
There is a Pro version of both this plugin and the GP theme.
