Bummer! This sort of thing typically happens when another plugin or theme is conflicting with HappyForms. To suss out what’s the problem, would you please disable all other plugins? Any better?
If not, can you please try switching themes? Any luck?
Let us know what you find out! Once we know the cause we can look into a way to patch this up for you.

In a word, no, it’s not possible out of the box at the moment, we’re sorry! You can do that with a PHP customization though! If you’re okay with that, would you share a link to your form, and a list of the fields you’d like to output in your emails? That should be enough for us to share a ready-made snippet.

It seems a rule from your theme style is overriding HappyForms’ styles, showing a field that should be hidden. Try popping the below snippet in your Appearance → Customize → Additional CSS screen:
.happyforms-flex > label > input[type="checkbox"] { display: none !important; }
That should hopefully do the trick. ??

I can’t speak for other plugins, but HappyForms by default sends your form submissions to the email address you configured under Receive submission alerts in your form edit screen Email step.
If none of the plugins you tried is able to send you emails though, the issue might be elsewhere — for example, the default PHP mailer is disabled on your server. I’d suggest to install an SMTP plugin (this, this or this are all good options), and configure it with your email credentials.

And yes, caching plugins can cause all sorts of issues with other plugins (not just forms). It’s a bit of a bummer about that.
Anytime you update WordPress, your theme or any plugin it’s always a good idea to test your forms. It’s a bit of a drag, but it’s added peace of mind.

Another way to do this is to paste this code into the Additional CSS section of HappyForms’ ‘Style’ tab. Any CSS added here will apply only to the form you’re editing.
But in all honestly, I’d just stick with what you’ve done.
Oh sorry, @afizan75! Please just install and active this free plugin. You don’t need to do anything to your theme at this stage.
This plugin will (fingers crossed) update a framework that exists in your theme.
