I appear to have found the issue.

On the My Account page there are two places to change your payment information.

Essentially, my client was clicking “Payment methods”

The only way a user can change their payment information for WooCommerce Subscriptions when in use with the WC Stripe Gateway is to click “My Subscription” and then click “CHANGE PAYMENT”

I suppose my question now would be, A.) how can I make the “Payment methods” button change customer payment info across the board to include their purchased subscription(s)? – OR – B.) Hide the Payment method button on the My Account page?
