My site (still under construction) is having the same trouble — not honoring the Default Template selection.
We chose “full width” on one of the page layouts to see how it would look and decided to switch back to default template (should be set as 4 column grid with right sidebar). Instead, all pages are showing as “full width”, even though default template is selected on those pages.
