    I thought this plugin would force all generated urls to use https:// instead of https://, on all pages similar to the example given there are multiple links within the code still showing/allowing https:// to be used…mostly for schema links. Is it not possible for this plugin to swap those out with https: links?

    The plugin does not rewrite/modify any content, either from posts or from theme files. What it does is redirect non-secure requests to secure ones. That means you still have HTTP in your source but it actually gets loaded from HTTPS. Since your site’s address is now properly configured to HTTPS any new links you create in the content will be OK. However, old ones, and especially things hardcoded in theme files need to be changed by hand if you want them to show HTTPS in the source.
